I’ve been meaning to post this recipe for weeks now … i guess its been a crazy few weeks with the Panpacs, and then getting back to normal again (whatever that is) I am going to write a post about my Panpacs experience for anyone that is interested, so look out for that later this week.
So i really love this slice, and its really great for summer as i keep it in the freezer, so its refreshing and yummy all in one.
Choc Nut No Bake Slice
- 2 cups of mixed nuts (or you can use nuts of your choice … almonds, cashews, walnuts etc)
- 1 cup shredded coconut
- 2/3 cup of raw cacao powder
- 1-2 tblsp chia seeds
- 1/3 cup nut butter (you can use peanut butter if you are not paleo)
- 2 tblsp rice malt syrup
- 1/2 cup coconut oil
Put nuts into the food processor and blitz until still chunky, tip into a bowl and add coconut, cocao and chia seeds and mix well. Put nut butter, rice malt syrup and coconut oil together and mix … add to the nut mixture and mix well. Turn into a 30 x 20 tin lined with baking paper and pop into freezer.
I usually take out of freezer and stand for 5 – 10 mins and cut up (as it goes really hard and is hard to cut up like that) after its cut then can go back into the freezer ….
