Eat Clean – Libby Wescombe Recipe

DELICIOUS ZUCCHINI AND CARROT FRITTERS

This is a healthy, gluten free, vegetarian and vegan friendly recipe for zucchini and carrot fritters. I have included both the normal method and my thermomix cooking method for those who have a thermomix as it’s really easy to do it in there as well.

These fritters are amazing served with poached eggs and siracha sauce/fresh lime squeezed over the top, and they go with any other chicken or meat dish really. So versatile and healthy. They are great for meal prepping ahead of time as well.

NORMAL METHOD:

*Serves 4

Ingredients:

2 Zucchinis, grated

2 Carrots, grated

1 clove garlic

4 stalks shallots, finely chopped

1 cup almond flour

2 eggs

1 teaspoon cumin

1 teaspoon paprika

Salt and fresh ground black pepper to taste ½ fresh lime Fresh coriander Sriracha sauce

 

Instructions:

Place grated zucchini in a cheese cloth or muslin cloth and squeeze dry. You want to try to get all the liquid out. You can save this healthy liquid for green smoothies/juices.

Once squeezed place back in bowl and add carrot, beaten eggs, shallots, almond flour, cumin, paprika, salt and freshly ground black pepper and mix well.

Heat 1 tablespoon of olive oil over medium heat, add 1/4 cup of the mixture and fry until golden brown each side, which will take about 3 minutes per side. Repeat until mixture is all used up.

To serve, squeeze some lime over the top, drizzle some Sriracha sauce over & garnish with coriander.

THEMOMIX METHOD:

*Serves 4

Ingredients:

2 Zucchinis

2 Carrots

1 clove garlic

4 stalks shallots

1 cup blanced almond (or sub with almond flour if you have)

2 eggs

1 teaspoon cumin

1 teaspoon paprika

Salt and fresh ground black pepper to taste ½ fresh lime Fresh coriander Sriracha sauce

 

Instructions:

Place almonds in the TM bowl and grind for 10 seconds, speed 9. Place into a bowl. Add garlic, carrot and shallots and chop speed 6, 4 seconds and place into the bowl with the almond meal.

Add zucchini into TM bowl and chop speed 5, 3 seconds.  Place zucchini in a muslin cloth and squeeze out as much of the juice as you can. You can save this healthy juice for green smoothies.

Place everything back in the TM bowl (except the lime, siracha sauce and fresh coriander) with eggs, salt and pepper and mix for 20 seconds on speed 3.

Heat 1 tablespoon of coconut oil over medium heat, add 1/4 cup of the mixture and fry until golden brown each side, which will take about 3 minutes per side. Repeat until mixture is all used up.

To serve, squeeze some lime over the top, drizzle some Sriracha sauce over & garnish with coriander.

Eating Well with Libby Wescombe

Shoe Tag Custom Made

Cleaning Jewellery Tips

Depending on the Ph of your skin, jewellery can tarnish very quickly – regardless of weather it is sterling silver, pewter, stainless steel ….  and if you are like me and “high maintenance” then my advice to you is to keep a jewellery cleaning cloth with you in your bag to polish your pieces up with.cleaningcloth

Here is a tip for cleaning the pewter charms:

Use a sponge to gently wash the pewter piece and rinse.  Dry and set aside.  in a mixing bowl add one teaspoon salt, one cup white vinegar and half cup of flour.  Mix slowly until paste is formed.  Use this as the cleaner.

For sterling silver:

Mix 1 cup of boiling water, 1 tablespoon salt and 1 tablespoon baking soda together.  Then pour into a foil lined pan – add your jewellery.  Slowly add 1/2 cup of vinegar and watch it do its magic.  Let it sit for 5-10 mins – rinse and dry.

Goal Setting for the New Year

I love the start of a new year … a clean slate, the chance to sit and evaluate where you are at, what has been and what you want for the year to come.  I am a goal orientated person, so when I have a plan in place its easier for me to work for it.  It is when I am ambling along without direction that I loose my motivation.goals

In our family we enourage everyone to set personal goals at the start of the year … a way to create focus.  We also set family goals, goals for our marriage and business.  It is important to set a time frame to re-evaluate the goals maybe 3, 6 and 9 month check ins to see how you are going, and reset if necessary.

I like to make a list of what I have achieved from the year just passed, before I make a start on the new goals.  I think it is really important to recognise what you have ticked off your list, and the things you have accomplished along the way.  goals2

Then you can start of the new goals.  If it is going to be a difficult goal, then it is worthwhile breaking it down into smaller chunks and if you need help from external sources work out what you need or who you need to help you on the way.  If it is a goal that will only take 12 weeks, think of what you will back it up with after that goal is reached … then, you are not left aimless once that goal finishes.  Maybe confide in a close friend and tell them what your goals are, so you are making yourself accountable to someone else.  For example – for CrossFit I usually chat with my husband and my coach, so we talk through what I want to do and the plan for it.  This gives me feedback from them also … which I find valuable.

Sweet Potatoe Hash Browns

I love sweet potatoe, it is one of my favourite foods.  This recipe from Libby Wescombe can be used for a delicious breakfast, side dish or even as a burger.  Give it a try …

Sweet Potatoe Hash Browns

INGREDIENTS:

4 medium sweet potatoes

2 eggs, whisked

1/2 cup almond flour

2 teaspoons sea salt and pepper to taste

1/4 cup spring onions, chopped

1/4 cup coconut oil

INSTRUCTIONS:

Pierce one of the sweet potatoes with a fork. Wrap it in a damp paper towel and place it in a small bowl with 1/2 inch of water. Microwave for 7-9 minutes, or until tender.

Let this sweet potato sit for 5 minutes. Then drain the water, peel the potato, and mash it with a fork.

Take the other 3 sweet potatoes and peel them. Then grate them with a grater using the large holes. In your bowl of grated sweet potatoes, add the previous mashed potato, the 2 eggs, almond flour, sea salt & pepper and spring onion. Combine with a spoon.

In a frying pan, pour coconut oil and heat over medium until your pan is hot. Then drop in sweet potato “cakes” in about 2-3 tablespoon batches. Flatten them with a spatula. Cook on each side for 5 minutes or until golden brown.

Once cooked, place on a plate with paper towels to drain the oil. Let them cool slightly so they crisp up before serving.

Kristy wins Survivor – Be Yourself, Back Yourself

Our family watched the Australian Survivor which had its final episode last week.  It is an interesting experiment of having many different personalities together, doing challenges and making aliances.  It came down to Lee and Kristy in the final, and I will be honest … I didn’t think that Kristy was going to be the winner.  However, she was the Sole Survivor and stayed true to her convictions.  I will give it to her, she was consistant and stayed true to who she is and stood by her word.

Breast Cancer Bracelet for October

I was 16 when my aunty died from breast cancer, and back then I did not know of anyone else who had it … now I could probably name 6 or 8 people who I actually know personally who have battled this illness. The more we remind each other to do constant checks and help spread awareness hopefully we will be able to get on top of it.  breastcancer
